Italy has enjoyed centuries of rich culinary tradition in regards to pasta. In that time Pasta has become so much more than a national dish, in fact it is nothing less than an international sensation, enjoyed and accepted by the most remote regions of the world. The long history of this humble product stretches far and wide and it has been adapted, altered and improved upon by a countless number of people, living and dead, who made pasta their life's passion.

 

The art of making pasta today however, has faltered, both in the new country and the old. While some truly exceptional pasta dishes may be found here and there, today there are few people who commit their life to making the perfect pasta. In America today, there is a newfound passion for the artisanal, healthy and delicious. Some commit their lives to wine, others to cheese, some to pasta.  It's about the practice, it's about the discipline and the knowledge, and the yearning to carry on the tradition of our ancestors.
